As it was the school holidays this last week and I haven't been a college and Ethan has been off nursery I have had a pretty fun filled week so here is my week in pictures

Foody Fridays: Lemon and white chocolate cheesecake

I've been wanting to do a series of blog posts in February so I've been trying to think of something fun and that you can do at home too! And as I don't usually get my DIY head on until the weather warms up mainly because if things need painting I like to do it outside as I am not the most careful of painters. I have decided on a food series that I'm going to do every Friday and I'm calling it...Wait for it!....Foody Fridays! Not the best series title you've ever seen but I have been racking my brain for a quirky title but nothing seemed to come to me, do give me some credit though as I am baking and making all the food myself! Haha!

 

So here's my first Foody Friday It is a lemon and white chocolate cheesecake with a ginger biscuit base. I was inspired by a recipe I saw on This Morning it was a lemon curd cheese cake By Mary Berry, But have adapted it to my own taste and to make it more suitable for a tasty valentines treat.

You will need:

200g of ginger biscuits

500g of mascarpone cheese

400g of lemon curd

50g of butter

juice of 1 lemon

 

150g of white chocolate

Strawberries for decorating

Icing sugar for decorating

I have blueberries in the picture but I decided to not use them.

Rolling pin

2 plastic food bags

inc cake tin with a removable bottom

spoons and mixing bowls

 

 

First I put the ginger biscuits in one of the food bags squeezed out all the air and tied a knot in the end and then placed it inside the other bag, I done this as if the first bag split it would still be held in the second and not spill every where. Now to crush the biscuits, I broke them up by hitting them with the rolling pin, I tried to get the biscuits as fine as possible so it was easier to cut the base once it was made. Once all the biscuits were crushed I poured them into a bowl.

 

 

Next I melted the butter in a saucepan and added it to the crushed biscuits and stirred it in until all the crumbs were covered in the butter.

 

 

 

Taking the greased tin I poured in the biscuit and butter mixture packed it all down evenly and then put in the fridge to set for 2 hours.

 

 

While the biscuit base was setting in the fridge I made the topping. First I melted the chocolate in a bowl over a saucepan of boiling water. Then into a bowl I put the mascarpone and lemon curd and mixed it until it was all combined together, next adding the chocolate and again stirring until its was all combined and lastly I added the lemon juice and stirred it all in until it started to thicken.

 

 

Once the base had set I poured on the topping mixture and spread it on top to make an even surface, Then placed it in the fridge to set over night.

 

 

 

 

After leaving the cheesecake to set over night I took it out of the fridge and removed it from the tin. To remove it I placed the tin on a glass and pushed down on the two top sides until the cheesecake was out of the tin, Keeping the cheesecake on the bottom of the tray I placed it on a serving plate.

 

 

 

 

 

To decorate the cheesecake I washed the strawberries, cut the tops off them and then cut them in half, Once they were in half to make them into hearts I cut out a small triangle from the top of each one.

 

 

 

 

 

I placed the strawberries round the edge of the cheesecake and one in the middle then dusted with a little bit of icing sugar and it was ready to devour!

This is an the app I use everyday its such an easy way of staying up to date with all your favourite blogs, you just follow them and all the latest post come up on a timeline for you to scroll though and read. My favourite thing about it is that once you have liked a post you can then go on to your profile and see your "Liked" posts so if you need to refer back to posts its an easy way of looking back.

 

 

 

 

 

How.Do

 

If you love crafts this is the app for you as its where other lovers of crafts upload their tutorials and pictures of projects and crafts they have done! Its really simple to use and all you have to do is create a profile and your ready to go. You can follow you favourite fellow crafters like their pictures and even comment.

 

 

 

A Beautiful Mess

 

I was so excited when this app came out and it didn't disappoint I love it!

It is a photo app and you can add cute little doodles and phases to your photographs as well as beautiful filters that really make your photos look stunning, the new feature of frames and putting multiple photos together has made it even better than before. It is so simple to use and the thump nail icon on you screen is so cute I can't bring myself to put it in a folder! is that sad? So If you love editing your pictures with quirky frames and filters and this isn't on you phone its a definite one to download.

 

 

 

 

 Cocoppa

 

I was really confused when I first got this but as soon as I got the hang of it I found it great. you can change the look off your app icons and customise your phone theme, you can choose from hundreds of different pictures for you wallpaper and apps. my phone looks so cute and girly now!

 

 

Cute Cut

This is my favourite video editing app I have used this so many times to make shorts films and edit pictures together, you can even add music, voice recordings and captions to your movies too. Its so easy to use and you can upload you videos straight to Youtube, Facebook and other social networking sites.


If you have any suggestions that you love I would love to know as like I said I am a sucker for an app!

Devon memories

Hi! I'm so sad to back from Devon it was so lovely to have a break from the usual day to day life, it has also made me want to move there so much more! the way of life there is so much more relaxed and to have a beach right on my door step would be my idea of heaven. so I thought I would do a post on my whole time there and what parts we all enjoyed the most.

So we travelled down on the Friday when Ethan finished school we got to James' nans at about 10.30 so we just unloaded our stuff from the car had a well deserved cup of tea and then went straight of to bed.

The next day was lovely waking up and just having breakfast made and no chores or anything to do except get Ethan ready and of course myself. James' nan lives in a town called Paignton so we just went down to the beach and then had some lunch done a little bit of shopping then me and James just relaxed in the sun while Ethan played in the childrens outdoor play area, in the evening we went out for something to eat in the local pub.

On day two we went to Torquay which again is beautiful we walked around the harbour and looked at all the boats which Ethan loved! There is also a London eye type wheel in Torquay which Ethan really wanted to go on but as soon as we had paid and were about to walk on to the carriage he freaked out and didn't want to go on bless him so we just stuck to the shops and ice cream.

 In the afternoon we decided to go back to the beach at Paignton, me and Ethan had a paddle in the sea and we all built a big sand castle and went treasure hunting as Ethan would call it to find some crabs and other little creatures. we didn't find anything too great just a shoe and Ethan found a piece of a fishing rod that he's now so attached to we can't seem to get rid of it!

later that night after dinner we headed back off to Torquay to take Ethan to the arcades but I think I had more fun than him, James won two Peppa pig teddy's and I won loads of key rings! I was also very shocked at how generous the arcades were as at home your lucky if you get one thing out of the machines.

 On the third day we just done a bit of shopping and Ethan had a an hour or so playing on the outdoor play area then later on that afternoon we headed for home.
